I'm a mom who loves to cook/bake, but also trying to eat healthy and cook nutritiously for my family. This is just a place I can access when we are trying to figure out what to cook for the week. I don't claim perfection on these recipes, but we're trying through experimentation. Any suggestions would be welcome!

Flour Tortillas

2 C. flour (half wheat/half white)
1/2 tsp. salt
1 Tbsp. unsalted butter
1 tsp. baking powder
3/4 C. water
2-4 Tbsp. ground flax seed (optional)

Mix together and roll dough out as thin as you can. I use a frying pan lid to cut out the shape of the tortilla. Cook on medium heat until it starts to brown. I store them in a ziplock bag. I can usually make between 6-8 tortillas depending on how thick I make them.

There is a learning curve to making these and it takes a couple times to get it how you like it.
