I'm a mom who loves to cook/bake, but also trying to eat healthy and cook nutritiously for my family. This is just a place I can access when we are trying to figure out what to cook for the week. I don't claim perfection on these recipes, but we're trying through experimentation. Any suggestions would be welcome!

Valentino's Pizza Crust

1 cup warm water (110 degrees F/45 degrees C)
1 tablespoon white sugar
2 1/4 teaspoons active dry yeast
3 tablespoons olive oil
1 teaspoon salt
2 1/2 cups all-purpose flour

  1. Stir water, sugar and yeast together until dissolved. Add the olive oil and the salt. Stir in the flour until well blended. Let dough rest for 10 minutes.
  2. Pat dough into pan or on to a pizza stone using fingers dipped in olive oil. If desired sprinkle basil, thyme or other seasonings on crust. Top with your favorite pizza toppings and bake for 15 to 20 minutes in a preheated 425 degree oven.

Here are my changes:
-I like to do 1.5 cups of whole wheat flour and the rest all-purpose flour. You might need to add more flour than the recipe calls for, but don't add it until after it rests for 10 minutes.

-I spray the pan and put cornmeal down before putting the dough on the pan. I cook the dough for 5 minutes before adding the toppings, and then cook the pizza for 15 minutes after adding the toppings.

- I like to add dried basil, oregano, and rosemary to the dough. It gives it a nice flavor.

Thai Chicken Pizza

This is a nice change from a red sauce pizza.

Pizza toppings:

Thai Peanut Sauce (I make mine from scratch, but you can buy this in a jar)
1 1/2 C. chopped cooked chicken
1/2 C. shredded raw carrots (about 2 carrots)
2 C. mozzarella cheese, shredded
1/2 C. chopped green onions
peanuts (I use unsalted, but any kind you like will do)
1 C. bean sprouts
1 red bell pepper, chopped (green can work too)
cilantro, chopped fine (probably about 1/2 cup but I don't measure. Just cover the pizza.)

I'm not very good with exact amounts of how much topping to put on the pizza, so these are just estimates. I cook the chicken in some of the peanut sauce to add flavor to the chicken.
